    Chorizo con Papas or Mexican chorizo with potatoes is commonly served for breakfast, but can be extremely versatile! This great as breakfast, lunch or dinner!

    Beef or Pork Chorizo?

    Both are great! It really boils down to personal preference. If you’re wondering what I use, I always go pork. Pork chorizo is the more commonly used.

    Spicy or Mild?

    Again, both are great! It just depends on how spicy you like it. Start off with Mild if you aren’t sure.

    Best type of potato?

    My favorite to use is the golden or yellow potato. It’s creamier than the others and cooks quicker. But really any potato will do! Russet, red, yellow, sweet potato, they’re all fine. Whatever you have on hand will work!

    Step by step process – How to make Chorizo con Papas

    Start by boiling your potato cubes in a pan with enough water to cover. Make sure to cover with a lid. It should take about 10-15 minutes and should be fork tender, but not falling apart.

    While the potatoes cook, to a skillet over medium-low heat add the diced onion and jalapenos. Cook for about 2-3 minutes.

    Add the chorizo to the skillet with the onions and jalapenos and cook for about 10 minutes. You will start to hear a crackling sound once it’s fully cooked. Make sure to break up the chorizo strip as you cook it.

    Drain your potatoes and add them to your chorizo.

    Cook together for about 5-8 minutes so the potatoes pickup all of the chorizo flavor.

    Add salt to taste.

    Ingredients

    Scale

    3 cups peeled and diced golden potatoes (4 small potatoes)

    1 stick chorizo (approx 7 oz)

    ½ an onion, diced

    1 jalapeno, diced

    Salt to taste
