Chorizo con Papas or Mexican chorizo with potatoes is commonly served for breakfast, but can be extremely versatile! This great as breakfast, lunch or dinner! It’s a little spicy but breakfast will be full of flavor!
3 cups peeled and diced golden potatoes (4 small potatoes)
1 stick chorizo (approx 7 oz)
½ an onion, diced
1 jalapeno, diced
Salt to taste
Start by boiling your potato cubes in a pan with enough water to cover. Make sure to cover with a lid. It should take about 10-15 minutes and should be fork tender, but not falling apart.
While the potatoes cook, to a skillet over medium-low heat add the diced onion and jalapenos. Cook for about 2-3 minutes.
Add the chorizo to the skillet with the onions and jalapenos and cook for about 10 minutes. You will start to hear a crackling sound once it’s fully cooked. Make sure to break up the chorizo strip as you cook it.
Drain your potatoes and add them to your chorizo.
Cook together for about 5-8 minutes so the potatoes pickup all of the chorizo flavor.
Add salt to taste.
