    Cactus, onions, jalapenos, garlic and scrambled eggs make for a healthy and filling breakfast. Great as a taco or just like that, one of my fave to goes!

    Fresh cactus or jarred?

    Either works great! As long as the fresh cactus has been prepared correctly before hand it should be delicious. Jarred is convenient because it’s ready to go after a quick rinse.

    Can I use egg substitute or egg whites?

    For sure! The egg choice is totally up to you. I personally prefer egg whites, so yes, egg substitutes, whites only, or the entire egg would be fine.

    Notes & Adjustments

    If you don’t like the spice level from the jalapeños, feel free to remove them completely or add less.

    To decrease the sodium in this dish use fresh cactus planks. You will have total control over how much salt goes into the dish. If you do use the jarred cactus, be aware that it does have a high amount sodium. That’s one of the reasons I rinse them before using them.

    Start by adding some oil or butter to a frying pan large enough to fit all of the ingredients

    Add the diced cactus , onions, and jalapeños.

    After a few minutes add the garlic.

    Add the scrambled eggs and cook until they are no longer runny or your desired doneness.

    These are great served as breakfast taco or burrito topped with salsa, avocado slices, and/or with a fresh home made tortilla.

    Description

    Ingredients

    Scale
    • 1 tablespoon oil
    • 1 cup diced and rinsed Nopalitos or pre-cooked cactus planks
    • ½ cup diced onion
    • ¼ cup diced jalapeños
    • 1–2 minced garlic cloves
    • 6 eggs

    Instructions

    1. To a frying pan start off by adding a tablespoon of oil.
    2. Next add your diced and rinsed cactus, diced onion, and diced jalapeños.
    3. Cook on medium-low heat while moving around for about 10 minutes or until they have cooked down a bit,
    4. Add the garlic and stir to mix in.
    5. Scramble 5 eggs in a bowl and add them to the pan.
    6. Stir the eggs until you have reached your desired doneness or they are no longer runny.
    7. Serve these with a side of refried beans or as breakfast tacos.
