Tangy, creamy, sweet, this Carlota de Limon (Lime Icebox Cake) is similar to a key lime pie with the Galletas Maria (Maria Cookies) acting as the crust within the dessert. This is perfect for potlucks, holidays, or any special event you are asked to bring dessert!

    Ingredients

Easy ingredients found at the grocery store.

    • Sweet condensed milk
    • Evaporated milk
    • Fresh squeezed lime juice
    • Cream cheese
    • Galletas Maria (Maria Cookies

    See recipe card for quantities.

    Instructions

    1. Step 1: Combine lime juice, evaporated milk, condensed milk, and cream cheese in a blender and blend.
    1. Step 2: Layer a dish with cream mixture.
    1. Step 3: Layer Maria Cookies.
    1. Step 4: Repeat steps 2 & 3 until it reaches the top. Finish with cream cheese mixture.

Tip: Use an 8×8 inch dish for taller layered cake. Any size will do, but the bigger the dish the thinner the cake will be.

    Substitutions

There may be some substitutions for the sweet condensed milk, I’m not sure how well that would work in the this. I haven’t tried them myself.

As for the Maria Cookies, if you really can’t get your hands on those, try it with Nilla Wafers or a cracker style cookie like Animal Crackers.

    Variations

There are different flavors of Carlotas with similar ingredients. Lime just happens to be the most popular and more original. Some other flavors include:

    • Mango
    • Durazno (peach)
    • Cafe (coffee)
    • Fresa (strawberry)
    • Piña (pineapple)
    • Guayaba (guava)
    • Chocolate
    • Platano (banana)

    The list is endless!

    Equipment

You will need the following equipment:

    • Dish with high sides (ex. 8×8 baking dish)
    • Blender
    • Spatula or spoon
    • Lemon squeezer (optional)
    • chopping board
    • knife

    Storage

Refrigerated the Carlota de Limon (Lime Icebox Cake)for about a week. Might keep longer, mine didn’t make past a week, we ate it all.

    Tip

I like mine to be more creamy filling than cookie, but you can add more cookie layers when layering with the cream. Just use less filling in between layers.

This can also be made in to individual servings by using clear plastic cups (for presentation) or any individual container. These would be good for a dessert table at a special occasion or any party.

    Description

Tangy, creamy, sweet, this icebox cake is similar to a key lime pie with the Galletas Maria (Maria Cookies) acting as the crust within the dessert. This is perfect for potlucks, holidays, or any special event you are asked to bring dessert!

    Ingredients

    Scale

    ¾ cup fresh lime juice

    1 – 12 oz can Evaporated Milk

1 – 14 oz can Sweetened Condensed Milk

1 – 8 oz block of cream cheese

1 ½ package (approx. 12 oz) of Maria Cookies

    Instructions

    1. Combine the ¾ cup of fresh lime juice, can of evaporated milk, can of sweetened condensed milk, and cream cheese in a blender and blend until thick and smooth.
    2. Add a layer of the cream mixture to the bottom of a pan, enough to coat and help the cookies stick and not move around.
    3. Place approx. 9 cookies in the dish, or enough fill the pan.
    4. add cream mixture on top to cover cookies.
    5. Continue to layer cream and cookies until you no longer have any cream mixture. It should be the last thing you layer.
    6. Refrigerate for at least 2 hours, overnight, or until it’s firm.
    7. Serve with whip cream (optional) and enjoy!

    Notes

If you don’t have Maria cookies, Nilla cookies and Animal Crackers work as a great substitute!

the dish size can be whatever you’d like as long as it’s has high sides for layering.
